2 romaine lettuce leaves, washed and dried
1/2 cup lettuce, chopped (optional)
2 oz sliced extra lean deli ham, low sodium
1 oz low fat/low sodium cheddar or swiss cheese, cut in half
1 tablespoon good quality mayonnaise (I use Helmann’s Canola because its cholesterol free)
1/2 teaspoon mustard (optional)
salt & pepper to taste
- Lay the whole lettuce leaves in a single layer. Place a slice of ham on each. Spread mayo and mustard on top, then add a half slice of cheese.
- Roll up burrito style tucking in the bottom, then sides. Secure with toothpick if needed.
Makes 2 wraps
TIP: This recipe is excellent made with tuna salad, egg salad or any other cold cut sandwich combination!
Make extras and store in an airtight container in the fridge for snacking and work lunches during the week.
