1 lb ground turkey
1 lb ground elk (you can use ground beef)
1 Spanish onion, diced (I love Spanish onions, they’re sweet)
1 cup almond meal/flour
1 (6 ounce) can tomato paste
3-4 garlic cloves, crushed
1/2 tbsp sea salt
2 tablespoons parsley, chopped or dried
1 teaspoon basil, chopped or dried
black pepper to taste
- Mix all ingredients by hand in a large mixing bowl.
- Place meat mixture into a large glass baking dish and form into a loaf shape.
- Bake at 350 degrees for 1 hour or until meat is no longer pink in the middle.
- Remove from oven and let rest for 10 minutes, cut in slices and serve.
