A quick, simple and delicious main course! I found the recipe in one of my favorite Cook Books Paleo Comfort Foods.
1 teaspoon black pepper
1 teaspoon cumin powder
3 cloves garlic, minced
¼ cup olive oil
2 tablespoons lime juice
1 tablespoon red wine or apple cider vinegar
1 tablespoon rosemary, preferably fresh
1-2 pounds flank steak
- Combine all ingredients (except steak) in a blender (I use a VitaMix). Blend well and pour over the flank steak in a Tupperware or zip lock bag.
- Allow steak to marinate for at least 3 hours or preferably over night.
- Preheat grill to medium-high heat. Oil the grill grate to prevent sticking.
- Grill meat for about 5 minutes each side, or to your desired done-ness.
TIP: When I marinate meat… especially steak, I stab the meat all over, on both sides with a fork. This way the marinade can seep in and work its magic! I get tender and delicious, flavorful meat every time.
