This is a super simple and delicious basic Italian tomato sauce. I do make tomato sauce with meat too. This is the tomato sauce I use for all recipes that call for the use of tomato sauce. There are never any jarred sauces in our pantry.
Quick and simple to prepare… this makes a generous batch so I recommend that you freeze or can the extra. I always store some extra sauce for quick dinner preparation on days that are just too frickin busy! When I’m in the mood to “cheat” and have some pasta, I recommend eating any Dreamfields brand pasta ( its significantly lower in digestible carbs). One of my favorite cheat meals is spaghetti and meatballs (meatball recipe coming soon :)) using Dreamfield’s brand spaghetti, this Basic Tomato Sauce and a scoop of ricotta cheese, sprinkled with Parmesan cheese and more fresh pepper. YUMMY!!!
2-3 tablespoons extra olive oil
1 medium onion, peeled and finely chopped
1 baby carrot ( it naturally sweetens the sauce and cuts the acidity of the tomatoes)
2 tablespoons fresh parsley, chopped
2 clove garlic, minced
2 tablespoons fresh or frozen basil, chopped
2 -28 oz. cans crushed tomatoes (if you’re adding fresh basil, be sure to purchase crushed tomatoes without basil added)
2 teaspoon tomato paste
Salt and freshly ground black pepper to taste
- Heat olive oil in deep stainless steel sauce pot on medium-low heat. Add the chopped onion and garlic.
- Saute the onion and garlic for approximately 1-3 minutes until the aroma releases.
- Add the crushed tomatoes, tomato paste, carrot, basil and parsley. Season with salt and pepper to taste.
- Bring to a low simmer and cook, uncovered until thickened, about 15 minutes.
