Those of you who are new to low carb and Paleo eating might look at some of the ingredients I use and ask “What the heck is that?” and “Where the heck can I find that” … both of those questions are completely valid. I’m here to support you, educate and guide you, so here’s the deal in a nutshell (pun intended!).
I do not advocate the use of any white stuff or wheat, or foods with gluten so, when I need to bake (dessert is a non negotiable in my life – gotta eat it!)
I use Almond Flour. Almond flour is a low-carb, gluten-free, baking alternative to standard wheat flour. Almond flour is made of – you guessed it – almonds, which are first blanched to remove the skin, and then ground up to a very fine consistency, similar to that of wheat and cornmeal.
By using Almond Flour in your baking you can turn an unhealthy, make you fat, carb loaded cake into a protein rich, good for your body food, Holy Crap! YAY!
I usually purchase my Almond Flour in bulk from Nuts Online or Amazon.
Bob’s Red Mill and Trader Joe’s also make Almond Flour/Meal too. Almond Meal is simply ground up almonds with the skin left on.
