2 medium zucchini, washed + chopped
2-5 garlic cloves (to your taste – I LOVE garlic)
1/4 cup extra virgin olive oil
1/2 cup lemon juice
1 teaspoons sea salt
1/4 teaspoon cayenne
3/4 cup raw tahini
3/4 cup sesame seeds
1 1/2 teaspoons paprika
fresh parsley, chopped
- Soak sesame seeds in a bowl of water for 1-3 hours beforehand.
- Drain sesame seeds. Blend zucchini, garlic, olive oil, lemon juice, salt, cayenne, sesame seeds, until smooth in a Vitamix or food processor.
- Add in 3/4 cup tahini and blend again.
- Taste and add more spices if you think it needs more, garnish with parsley and paprika. Serve with celery sticks or cucumber slices, etc.
