I don’t know about you Goddess, but sometimes I get really bored with eating conventional salads … this recipe mixes things up a bit; new flavors and textures does my taste buds some good! Hearts of palm is not a veggie that most people I know use … it’s actually the inner core of a palm tree – hence the name “hearts of palm”! I really like it’s mild, slightly artichoke-y flavor. I buy my Hearts of Palm at Trader Joe’s Grocery Store, they sell Hearts Of Palm in a glass jar which I prefer to the common metal can packaging I’ve found at other food markets.
You can eat this salad as a side dish with a protein OR you can throw some protein (strip chicken, shrimp, scallops or steak) right on top to make it a nutritionally complete meal in a bowl!
28 ounces canned hearts of palm, drained & cut into 1-inch slices
2 tablespoons extra virgin olive oil
1-2 tablespoons raw apple cider vinegar
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 pint cherry tomatoes, washed & halved
lettuce leaves or your choosing
- In a large bowl toss hearts of palm slices, oil, vinegar, garlic, oregano, salt, and pepper. Marinate 20 minutes for flavors to blend.
- Cut cherry tomatoes in half. To serve, spread out lettuce on a serving platter, put hearts of palm salad on top and sprinkle with olives.
