I had some friends over for my birthday a few weeks ago and wanted to make something that was super yummy and no fuss, so I decided to make a big tray of Italian Sausage and Peppers. Then I thought to myself … I’d love to eat a cheesy, delicious, Italian, comfort food-y type of dish too, so I decided to try something…. an experiment. Well Goddess, here’s my favorite new and exciting way to eat sausage – YUM! I’m still occasionally shocked how satisfying living SUGAR FREE can be.
12 Italian sausage (I use a mixture of hot and sweet)
a drizzle of olive oil
14-16 ounces of Basic Italian Tomato Sauce (get my simple & quick recipe here)
1 to 1 1/2 cups shredded mozzarella cheese
1-2 ounces of Parmesan cheese
2-3 cloves garlic, minced (optional)
salt and pepper to taste
- Preheat oven to 350 degrees F. Cut each sausage into thirds. Put in roasting pan and cook in oven until brown on all sides. Keep turning sausage during time in the oven.
- Next, put cooked sausage in new baking dish and cover generously with the tomato sauce. Sprinkle it with minced garlic if using, then the mozzarella cheese.
- Now sprinkle Parmesan cheese, salt and pepper to taste. Cover with foil and bake in oven for approximately 20 minutes or until sauce begins to boil.
- Uncover baking dish and cook for another 10 minutes or so to brown the cheese.
