I had the most incredible entree (Steak Scampi) at a restaurant here on Long Island, and being the obsessed Food Goddess that I am … I had to recreate it at home, and then share the recipe with you!
It came out scrumptious – if I do say so myself. I served the Steak Scampi (my favorite cut is ribeye, so that’s what I used) with a side of Roasted Broccoli. Be sure to use high quality, grass fed beef, it’s much healthier for you than corn fed beef.
2 grass fed, bone in rib eye steaks (you can use whatever cut of beef you’d like)
3/4 cup dry white wine
1/4 cup olive oil
4 garlic cloves, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh parsley, chopped
4 tablespoons organic butter
- Cook steaks as desired (grill, broil, etc.)
- While steaks are cooking, melt butter and oil in saute pan over medium heat. Once they’re melted, add the sliced garlic. Once the garlic has browned add wine, lemon, parsley, salt and pepper. Cook for about 5 – 10 minutes on a medium heat then pour scampi sauce over cooked steaks.
