Simple to throw together on a weeknight, this recipe has a comfort food feel and helps to provide you with your daily requirement for protein and vegetables.

2 pounds lean ground beef
1 pound bag of frozen mixed vegetables (I used broccoli, cauliflower and carrots)
1 tablespoon minced garlic
1 tablespoon dried minced onion
3 eggs, beaten
8 ounce can tomato sauce
1 packet dry Ranch dressing mix
hot sauce to taste (I used 4-5 shakes but my eldest son Noah said it could’ve used more HEAT *giggle*)
1 bag shredded sharp cheddar cheese
salt and pepper to taste
- Preheat oven to 350 degrees F and coat a large baking dish with non stick spray.
- In a large mixing bowl, combine all ingredients except for 1 cup of cheese.
- Pour mixture into baking dish and bake uncovered for approximately 40 minutes.
- Remove from oven and sprinkle the remainder of the cheese on top and bake for approximately 15 additional minutes or until the cheese melts and browns slightly.
