I have absolutely NO IDEA where this recipe downloaded into my brain from … all I know is I’ve been making it for as long as I can remember. I do not have exact measurements for the ingredients. I cook by “feeling” the amounts, so if you like garlic … go heavy on the garlic, etc.
You really can’t go wrong with this as a side dish. Cucumbers have a mild taste and are great to eat year round.
Honestly. I can’t get the finished dish to the table when I make it, my family hand picks out the slices and EATS it all up prior to meal time!
I made it with chives this time but I have on occasion used chopped red onion instead.
cucumbers, washed, peeled and sliced
apple cider vinegar (I use raw apple cider vinegar)
sea salt & ground pepper
chives, washed & chopped
- Put sliced cucumbers in a bowl. Drizzle with olive oil, vinegar and sprinkle with spices.
- Toss and serve – that’s it…
