I found this recipe from Katie Lee (the former Mrs. Billy Joel) in People Magazine last week! My son Noah loves Salisbury Steak, so I had to give it a whirl. I needed to swap a couple of insulin spiking ingredients that were listed in the original recipe … the end result was delicious and everyone was very happy.

The recipe is simple to make and has a nice flavor. I recommend it for a quick weeknight meal paired with a green salad.
2 yellow onions
1 lb. ground beef
1 tablespoon Dijon mustard
1 teaspoon salt, divided
½ teaspoon black pepper, divided
½ teaspoon garlic powder
1 tablespoon grapeseed oil
2 cloves garlic
3 cups low-sodium beef broth
1 tablespoon Carbquick mixed with 1 tablespoon cold water
- Cut 1 onion in half. Grate 1 half and slice the other. Slice the other onion too. In a mixing bowl, combine grated onion, ground beef, egg, mustard, ½ tsp. salt, ¼ tsp. pepper and garlic powder. Make into 4 patties.
- Heat oil in a skillet over medium-high heat. Sear patties for 2 minutes on each side. Remove to a paper-towel-lined plate. Pour off fat from skillet. In the same skillet, sauté sliced onions for 10 minutes over medium heat. Add garlic and cook 2 minutes. Pour in broth, ½ tsp. salt and ¼ tsp. pepper.
- Bring to a simmer and cook, covered, for 5 minutes. Stir in cornstarch mixture. Add patties and simmer, covered, for 10 minutes.
